Located at 25 Calle del Amparo in the vibrant neighborhood of Lavapiés, there is a workshop that is a true treasure of Madrid’s tradition. Julián and his son José Luis are the last artisan waffle makers in the entire capital, keeping alive a craft that has been disappearing over time.
Julián, with a mix of nostalgia and pride, recalls how «there used to be many artisans in the buildings.» At 13 years old, he started making waffles, a family tradition that dates back to his great-grandfather, who was a baker.
«Back then, there was hunger, and he would take flour from the workshop, a little sugar, and make waffles at home,» he explains. Now, José Luis represents the fifth generation of this family dedicated to the art of waffle making.
The production process remains true to traditional techniques. Although Julián notes that «the only thing that changes are the irons,» the quality and flavor remain the same.

The waffles are made with a simple dough that includes water, sugar, flour, a dash of oil, and vanilla essence. Once cooked on the iron, they must be rolled quickly before they cool to handle them easily.
The flavors they offer are three: vanilla, coconut wafer, and a delicious combination of vanilla and chocolate. Each bite is a journey into the past, a reminder of the sweet traditions that are part of Madrid’s cultural heritage.

Julián also preserves three antique waffle irons that he used to sell his products. These rotating machines are an essential part of his history, and he still travels through the streets of Madrid to offer his exquisite creations. «During San Isidro, everyone wants waffles, and they want artisan waffles,» he adds with a smile.
Despite the challenges his craft faces in an increasingly industrialized world, Julián is determined to keep this tradition alive. We can proudly say in Madrid that it is more alive than ever.
